Farm Fresh Healthy Summer Recipes
With summer in full swing, now is the time to take advantage of the delicious fruits and veggies that have come back into season. Whether you’re a gardening expert ready for your first harvest of fresh vegetables, or a frequent farmers market shopper, we’ve compiled our favorite, and most delicious, summer recipes for you to try all season long.
Not your average Caprese salad:
Caprese salad is one of the easiest, and quickest, dishes you can make. Not only can this serve as an appetizer, a lunch or dinner side, it can also be twisted into a full meal As the base, mix grape tomatoes, fresh basil, mozzarella balls and a bit of balsamic (to taste) in a large bowl. As your herb and vegetable gardens grow, grab your favorite foods to enhance the typical caprese salad. The opportunities are endless! Try adding cucumbers, red onion, avocado, and/or figs. To enjoy as a full meal, incorporate a protein, such as grilled chicken or shrimp, or chick peas.
Mango avocado corn salsa:
Nothing beats a sweet and savory salsa added to your favorite meat-of-choice. Finely dice one mango, an avocado, red onion (to taste), tomatoes, cilantro, and mix with corn and lime juice. Try prepping a large amount of this salsa, and add to your lunches and/or dinners throughout the week to keep your meals fresh and enjoyable. This salsa is great with any type of fish or chicken. Try this next time with grilled salmon and a side of rice.
Sweet & Spicy pineapple chicken kabobs:
Don’t cool-off your grill just yet! Grab a ripe pineapple from your local farmers market for this sweet and savory dinner recipe. Cut the pineapple, as well as a red onion and an orange sweet pepper, as well as chicken breasts in cubes to be placed on the kabobs. Lightly coat with low-sodium teriyaki sauce and red pepper flakes (more if you prefer spicy) and place on the grill. Add your favorite vegetables to this recipe. Zucchini, squash or mushrooms are great additives.
‘Every dinner’ broccoli salad:
It’s called ‘every dinner’, because this easy, and nutritious, broccoli salad, goes with absolutely every dinner this summer. Refreshing and only a few ingredients, this salad will be a staple in your fridge this season. Combine broccoli florets, cheddar cheese, dried cranberries, red onion, crumbled bacon and sunflower seeds in a large bowl. Mix in your favorite light dressing, or make your own out of light mayo, light sour cream, white vinegar, sugar and salt and pepper! Chill before serving.
